Ultra-Fast Financial Dishwasher Increases Throughput By 70 Percent

In February, Miele’s ultra-fast commercial dishwasher was installed at the famed De Gustibus Cooking School at Macy’s Herald Square. Within just a few days, the kitchen staff experienced a 70% increase in cleaning throughput. Sal Rizzo, De Gustibus’s owner, says the commercial dishwasher is a hit with the chefs and kitchen support staff responsible for making each presentation a success because of its ability to turn around dishware, cutlery and glasses in just 10 minutes.

“If a culinary school can achieve this kind of efficiency, imagine what a home cook could experience when serving guests ranging from 25 - 250 people. This is a one-of-a-kind product and we are thrilled to have it as a part of our kitchen operation. It makes the whole clean-up process run much smoother,” states Rizzo. “At De Gustibus, world renowned chefs provide cooking demonstrations year round and serve a five course meal every night, so a fast dishwasher is imperative to keep the dishes, cutlery and glassware flowing.”

“You can’t clean 60 plates in 40 minutes to an hour and keep the kitchen and chefs moving,” he states. “Prior to installing Miele’s commercial dishwasher, we had two residential dishwashers running and hired someone to coordinate the washing of glassware the next day, which would take most of the morning. Now, the dishes are finished at night and our morning person arrives and does a load of glasses every ten minutes. She is done within an hour and sets up for the day in the process. The machine cleans the glasses beautifully – at a maximum of 18 minutes. It is an amazing product and simple to use.”

Rizzo says he investigated other commercial dishwasher brands, but chose Miele because of its simplicity and reputation. “Other commercial-grade systems require complicated installations including special piping and electrical requirements. They also require different chemicals for cleaning. Miele’s commercial system has a residential footprint and uses regular residential dishcare detergents.”

According to Deborah Ruriani, Product Marketing Specialist for Miele Professional, most commercial dishwashers are single-level tank systems. “Miele offers a tankless, fresh water system featuring dual-level cleaning for large load capacity. So it looks and feels more like a domestic machine, but has the power of a commercial system, which is what the objective of Miele Professional products for residential application is all about,” Ruriani explained.

While throughput speed is a leading draw for the product, the fast cycle time is not offered at the expense of cleaning performance. Miele’s high-volume commercial dishwashers have a robust water circulation system, which is 4-6 times greater than that of a residential dishwasher. It also stands out from the crowd because of its advanced programming capabilities.

Other intelligent programs adjust mechanical variables for water levels, number of rinses, wash temperatures, holding times and even a delayed start to accommodate the wide spectrum of user requirements.
